Soulfood Means Comfort Food and Comes From the Heart!

Hello again, this time out I wanted to share with you a great comfort food recipe that I like to prepare for my family! It is my smothered chicken breasts served over hot white rice with sweet peas on the side. I don't know what it is about this combination of foods but they are great together! I wouldn't change a thing! Boneless chicken breasts seasoned and sauteed then braised in a light vegetable laden gravy until super tender. Served over a bed of hot steamed white rice alongside some buttered sweet peas! Only thing missing is some hot cornbread and REAL butter (not that margarine crap)! Dad gum, let's get started on this recipe. I can't wait!

My Homemade Smothered Chicken Breasts

Smothered Chicken Breasts and Rice

  • 4 boneless, skinless chicken breasts
  • 1 yellow onion, finely chopped
  • 2 carrots, peeled and diced small
  • 1 clove garlic, crushed and chopped fine
  • 1 rib celery, diced small
  • 2 tbls cooking oil
  • 2 tbls flour
  • salt and black pepper
  • water or chicken stock
  • rice

Heat the oil in a large skillet over medium high heat. Season the chicken with salt and black pepper and cook about 4 minutes on each side until lightly browned. Continue until all breasts lightly browned. Remove to a warm plate. Add in the chopped onions, celery, carrots and garlic cooking and stirring until a little tender but not browned. Add in the flour and stir in well. Cook flour about 2 minutes and stir in enough water or chicken stock to make a thin gravy. Turn up heat and continue stiring until a gravy forms. Tatse and adjust seasonings. Add in the chicken breasts and cover skillet. Turn heat down to medium and allow breasts to simmer or braise until tender (about 1 1/2 hours). Stir occasionally as needed. You may have to add more water or stock as needed.

Plate up some fresh, hot steamed rice and spoon some of the gravy and chicken breasts over. Serve some buttered sweet peas alongside. A pan of hot cornbread, REAL butter and some Tabasco sauce round out this meal! Iced tea or a good ice cold American beer would be a great accompaniment to this soulfood classic!
